Menu Concept: Feasts and Motifs
A Bespoke Design & Culinary Experience
Step into a curated celebration of Indian craftsmanship, flavour, and form, where each course becomes a canvas and every ingredient tells a story. Feasts and Motifs is a visual and sensory journey through the many textures of India inspired by block prints, natural fibres, carved wood, and artisanal design. The five-course menu, paired with custom cocktails, mirrors the evolution of Indian textile and design, from the vibrant brights of Rajasthan’s dyes to the earth- toned richness of Deccan woods and Mughal silks. Each dish arrives precise, colourful, and intentionally layered.
COURSE 1: Pattern & Contrast
Ahmedabadi Dhokla
Twice-cooked lentil cakes, trio of chutneys
A bright, playful beginning, airy yet grounded. This chaat-style starter captures the vibrancy of Gujarat’s textiles with pops of colour and sour-sweet balance, layered like the first print block on white cotton.
COURSE 2: Sheer Layers & Warmth
MurghTamatar Shorba
Bright tomato broth with fresh coriander
Delicate, flowing, and light, this course is the muslin of the menu: clear, warm, and gently spiced. Served to highlight its depth of hue, it acts as a palate-awakening interlude, like the soft transparency of silk revealing the next layer.
COURSE 3: Embroidery in Flame & Smoke
Highway ChickenTikka
Chili garlic marinade
Shammi Kebab
Lamb-lentil patties, mint cream, tomato relish
Sarson MacchiTikka
Mustard chilli marinated fish, tomato relish
A celebration of India’s rugged grandeur, the spice-laden roads of the north and the hand- forged tools of the tandoor. These kebabs are the thread work of the experience, complex, smoky, and aromatic, each one embroidered with spice, marinade, and char.
COURSE 4: Richness, Depth & Regal Geometry
Tariwala Murgh | Nihari Gosht | Dal Makhani
With Namak Mirch Roti & Paronthi Naan
The centrepiece of the feast, the mains draw from Mughal opulence and Punjabi earthiness: sauces slow simmered to velvet, tender meat, and breads with the rustic char of clay and flame. These are dishes that wear their spice like couture, layered, complex, and unforgettable.
COURSE 5: Structure &Tradition
Murgh Matka Dum Biryani
With raita, papadam, pickles, garden salad
A sculptural composition, the architecture of rice, spice, and meat baked under seal, then gently opened tableside. The biryani is the carved wood of the menu: solid, historic, artful. Served with bright accompaniments, it offers a moment of tradition and ceremony.
COURSE 6: Sweet Motif & Memory
Gajar Halwa with Vanilla Ice Cream
Warm, grainy, spiced, this dessert is the textile fringe of the meal: soft, golden, and comforting. Paired with ice cream, it melts like nostalgia. A sweet ending that speaks of hearth, home, and handcrafted detail.
Closing Note:
Feasts and Motifs is an invitation to experience India through its most expressive mediums: food, fabric, and form.
It is a celebration of culinary storytelling and design where the rustic and the refined meet, where spice is language, and every plate is a pattern worth remembering.
